The SUNsPROs project targets the obtention of sustainable fungal proteins (single cell protein, enzymes and peptides) that comply with high nutritional characteristics in terms of high essential amino acids (isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan and valine), minerals (Fe, Zn, Na, Se, Mn, Ca, P) and vitamins (B2). This could  be achieved through the upcycling of agri-food waste (among others) as suitable and renewable substrates for fungi development as well as the design and describe processing models for the sustainable recovery of these target proteins through the application of biotechnological and environmentally friendly methods.
